Clayton Chapman is living his dream. He is the chef/owner of The Grey Plume in Omaha, Nebraska where he crafts seasonal, locally driven, new-American cuisine.
He graduated in 2006 from The Illinois Institute of Art – Chicago with an Associates degree in Culinary Arts equipped with both cooking fundamentals and a practical business savvy, feeling ready to start work in a professional kitchen.
At only 25-years-old, he is garnering national attention for his inspired food. He recently picked up a Trailblazing Chefs Award from Cooking Light and is surely one to watch in coming years.
